Consuming safe and nutritious food requires trust. The globalisation of markets may negatively affect public trust in national food safety regimes. For example, the free trade agreement (FTA) being negotiated between the UK and the US has received significant public attention in the UK due to concerns that existing food standards will be weakened. This project will examine consumer trust in food governance given the increasing globalisation of trade in food. The research questions that will be addressed include: how does the public perceive and evaluate production methods used in the meat industry, specifically chlorinated chicken Are public perceptions of food safety risks heightened during periods of uncertainty, for example changes in market conditions How do consumers evaluate new and non-governmental cues of safety (e.g. private certification) on food products and are they willing to pay a price premium for a credence cue For example, in a UK-US FTA the market for chicken could go from one where consumers know with certainty that the product is not chlorine-washed, to one where chicken is regarded as a credence good. This research will have implications for food policy and the food industry, particularly with respect to strengthening governmental and market-based trust regimes.
