课程简介
The Artisan Breads & Specialty Desserts Level 1 Certificate will prepare a graduate to work as a specialty breads baker in a variety of production settings such as, in-store bakeries, boutique bread shops and commercial bread production facilities. The Artisan Breads & Specialty Desserts Level 1 Certificate will teach essential skills in basic baking principles and production for yeast doughs and artisan breads. Students will learn techniques in developing bread formulas, ratios, and shaping. In addition, students will learn a variety of production procedures and techniques for basic and advanced pastry doughs, fillings, cookies and tea cakes.
